Beverage Manager at Spirit Copa, Fairmont Rio de Janeiro Copacabana

Born in São Paulo, Taium (Tai) Barbin grew up in Florianópolis, an island in the southern coast of Brazil from where he only left to move to Australia in 2003. There, on the other side of the globe, he studied gastronomy and hospitality, graduated as chef 3 years later and found his true calling in mixology. Being in the trade for more than 10 years, he worked in five-star casinos and resorts bars, as well as splitting the counter with notable bartenders, such as the Calabreses, in London.

After living for 10 years in Australia, he moved to Ibiza, in Spain, for one year, then spent another one in London and six months in Scotland, before going back home to Brazil in 2014. Barbin collects three round trips around the world, including journeys from Machu Picchu to Tokyo.

BACKGROUND

Not only a creative and innovative mind concerning mixology, Tai Barbin has experience in managing teams both in bar halls and big events. He has worked for Sheraton Mirage, Cloudland, The Jaime Oliver Festival UK and Rock in Rio Lisboa, among others events, besides creating customized experiences for the House of Peroni Project. In Brazil, he has already been the head bartender in Bar D’Hôtel, Nosso and Salve, accumulating thirteen awards from specialized press in less than five years and featuring on the Tale of Cocktails 2018 as one of the ten best cocktail bars in America with Nosso.

In a few months, Tai Barbin will be not only shaking cocktails behind the counter of Spirit Copa Bar but also (and mainly) creating tailor made beverages menus inspired by Brazilian specialties at the soon to be open Fairmont Rio de Janeiro Copacabana, the first Fairmont Hotel in Latin America. Developed by Barbin’s experienced mind and hands, signature drinks made with exotic tropical fruits and the best selection of beverages will be tasted in this highly attractive place in the hotel, overlooking one of the most famous beaches in the world.
